Makes 8-10 servings
1 stick of butter, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 cup whole wheat flour
1/4 teaspoon salt
1 1/2 teaspoon baking powder
8 oz. low-fat cream cheese, room temperature
1/4 cup honey
1 cup raspberries
1 cup strawberries
4 mandarin oranges
1/4 cup blueberries
1/4 cup blackberries
How to Make It
- In a mixer, mix the butter and the sugar together.
- Add in the egg and vanilla, and beat until smooth.
- Add in the wheat flour, salt, and baking powder.
- Remove the dough onto a sheet of plastic wrap. Shape the dough into a circular form, and wrap up with plastic.
- Refrigerate the dough for 2 hours.
- Preheat the oven to 400 degrees.
- Place the dough on a large baking sheet or a pizza pan.
- Using a rolling pin, roll out the dough into a large cookie.
- Bake in the oven for 10-15 minutes. The edges will get slightly burnt, and the middle may be still doughy. That’s OK!
- While the cookie is cooling, whisk together the cream cheese and the honey in a bowl.
- Spread the “icing” onto the pizza.
- Slice up the strawberries, oranges, and kiwis. Arrange all the fruit on the pizza in whatever order you desire!
