Stylish evade is a technique done by guarding right before an enemy attack would hit you.
You block by pressing 
or 
(whichever direction is away from the opponent) with either the d-pad or left stick.
The achievement popped immediately for me (so you shouldn’t have to wait for the round/match to end).
